Adobe Lightroom, Bridge or Photoshop. Lightroom and Bridge you can batch process to remove EXIF data. Photoshop you can setup to remove EXIF data when files are saved to JPEG, not sure about other formats. CS2 does it for you automatically when you save to web.

There's a free tool called imagemagick that is great for doing things like this to large numbers of files. It's a swiss army knife of image manipulation tools
Downside is that it's command line, and a little trickier to use.

Great if you find out you need to make some change to a couple hundred images, or generate tif versions of every file from a shoot.

If you're a command line sort of guy (which I am), see if OS X ships with the "jpegtran" utility. I have a small script that, among other things, strips everything out of a JPEG except the image data. This includes EXIF, IPTC, comments, embedded thumbnails, embedded ICC profiles, etc.

Code:
jpegtran -copy none -optimize infile.jpg > outfile.jpg

I also use ExifTool (a Perl script and module) to manipulate the EXIF header in other ways. Again, it's a command line tool, but I find that those are often the most efficient.

Not everyone wants to give their secrets away.

The easiest way to ditch the Exif info on your edited images is to use software that's pre-Exif, it was created before Exif existed...it loads the images fine, but since it doesn't know what to do with the extra data it's ignored; up to last week I was using editing software (on my PC) from '98 (since it did everything I needed, plus it didn't hog a lot of memory). Only reason why I updated was it was on sale, I'm still keeping the older version for my laptop.
